2014 Edition IFC  675 IAC 22-2.5 
NFPA 10 Chapter 6 Inspection, Maintenance, and Recharging 6.3.4* Maintenance Recordkeeping. Each fire extinguisher shall have a tag or label securely attached that indicates the month and year the maintenance was performed and that identifies the person performing the service.  
The owner/operator needs to provide documentation showing that all fire extinguishers have been Inspected for an Annual Inspection.

Sec. 904.11.5 2014 Edition IFC 675 IAC 22-2.5 
Portable fire extinguishers shall be provided within a 30-foot (9144 mm) travel distance of commercial-type cooking equipment. Cooking equipment involving solid fuels or vegetable or animal oils and fats shall be protected by a Class K rated portable extinguisher in accordance with Section 904.11.5.1 or 904.11.5.2, as applicable. 
The owner/operator of the facility needs to install a K Class fire extinguisher within the Kitchen area.

Sec. 904.11.6.3 2014 Edition IFC 675 IAC 22-2.5 
Fusible links and automatic sprinkler heads shall be replaced at least annually, and other protection devices shall be serviced or replaced in accordance with the manufacturer?s instructions. Exceptions: 1. Frangible bulbs are not required to be replaced annually. 2. When automatic bulb-type sprinklers or spray nozzles are used and an annual examination shows no buildup of grease or other material on the sprinkler or spray nozzle. Hoods, grease-removal devices, fans, ducts, and other appurtenances shall be cleaned at frequent intervals in accordance with Section 609. 
The owner/operator of the facility needs to provide documentation showing that all devices are in working order within the kitchen hood system.

Sec. 904.11.6.2 2014 Edition IFC 675 IAC 22-2.5 
Automatic fire-extinguishing systems shall be serviced at least every six months and after activation of the system. Inspection shall be by qualified individuals, and a certificate of inspection shall be forwarded to the fire code official upon completion. 
The owner/operator of the facility needs to provide documentation showing that the Kitchen hood fire-extinguishing system has been Inspected and tested for an Annual Inspection.

Sec. 901.4.1 2014 Edition IFC 675 IAC 22-2.5 
Fire protection systems required by this code or the International Building Code shall be installed, repaired, operated, tested and maintained in accordance with this code. 
The owner/operator of the facility needs to provide documentation showing that the Fire Sprinkler system has been tested for an Annual Inspection, Testing, this will include all sprinkler heads that have been painted or covered with tap or are obstructed have been replaced or repaired and if any deficiencies are noted on the report, all deficiencies will be corrected.

Sec. 609.3.3.3 2014 Edition IFC 675 IAC 22-2.5 
Records for inspections shall state the individual and company performing the inspection, a description of the inspection and when the inspection took place. Records for cleanings shall state the individual and company performing the cleaning and when the cleaning took place. Such records shall be completed after each inspection or cleaning, maintained on the premises for a minimum of three years and be copied to the fire code official upon request. 
The owner/operator of the facility needs to provide documentation showing that the Kitchen hood system, vents, duct work, fans and all other components that make up the hood system have been properly cleaned.
